 Modern kitchens, although more efficient than kitchens of the past, present new challenges for fire suppression. Modern appliances are insulated to improve cooking efficiency. However, this can also make it harder to extinguish a fire within the appliance. Also, cooking oils currently used burn at higher temperatures than oil used previously.
